This is one of my favorite easy fast dinners. It's midwinter around my area, and a fresh salad helps to break the winter bla's. I start with boneless chicken breast (easier for shredding). Season with Olive oil, seasoning salt, Italian seasoning, and fresh ground pepper. Broil for 15 minutes, flip and broil for 15 minutes. As the chicken is cooking, tear the romaine lettuce into bite size pieces, and slice red onions. I took the short cut (it was a busy Tuesday evening) and used bottled dressing. Let the chicken cool, and shred, mix with dressing, add parmesan cheese and you have a healthy dinner. You can top with bacon or croutons if you like.
